Lent Lunch

today's Lent lunch: Panini with tomatoes, brussel sprouts, grilled eggplant, & a homemade pesto (a la Nelly in Lima!) grilled asparagus, and celery. 
Tonight's menu will include some of the eggplant I pounded today.. lightly breaded with homemade Italian bread crumbs, more pesto, and grilled asparagus. yeah.. it's lent! YUM!
